1 20-ounce bag, dried 15 bean soup mix or mixed beans (I don’t use seasoning packet)

2 quarts + 3 cups (11 cups) water

2 teaspoons salt

Black pepper to taste

2 medium onions, cut into chunks

1 pound smoked sausage, cut into chunks

 

 

Rinse beans & place into a large saucepan with water, salt & pepper.  Bring to a boil, reduce heat to medium-low & cook approximately 2 hours or until beans are tender & thickened.  Just before beans are done, sauté onions in a little oil until tender, add to beans.  In same pan cook sausage until lightly brown, drain well & add to beans.

 

NOTE: Add a 15-ounce can of crushed tomatoes & garlic if desired.
