Vegetable and Jalapeno Cheese Casserole
2 cups fresh cauliflower flowerets
2 cups fresh broccoli flowerets
3 tablespoons butter
1 cup chopped onion
1 cup sliced fresh mushrooms
1 (8-ounce) jar jalapeno Cheez Whiz
1 (10 3/4-ounce) can cream of mushroom soup
3/4 cup chicken broth
2 cups cooked rice
Pepper to taste & salt if needed
*Steam cauliflower & broccoli together until crisp tender; drain well & chop roughly.
*Melt butter in a skillet & sauté onions & mushrooms until tender.
*Combine Cheez Whiz, mushroom soup & chicken broth, microwave until cheese has
melted.
*Combine all vegetables together & add cheese mixture.
*Add salt & pepper if desired & fold in rice.
*Pour into a buttered baking dish.
*Bake at 350 degrees for 25 minutes or until heated through.
NOTE: May use frozen cauliflower & broccoli instead of fresh. Just omit the steaming & thaw the vegetables.
