1/2 cup oil

6 large eggs, separated

2 large ripe bananas, sieved

1 teaspoon grated orange zest

1/3 cup orange juice

2 1/4 cups sifted cake flour

1 1/2 cups sugar

3 teaspoons baking powder

3/4 teaspoon salt

1/2 teaspoon cream of tartar

 

 

*Combine first 5 ingredients, using the egg yolks & reserving whites; set aside.

*Sift next 4 ingredients together into a mixing bowl.

*Make a well in the center of dry ingredients & add the oil mixture.

*With a spoon beat mixture until smooth.

*Put egg whites in a large bowl, add cream of tartar & beat until peaks are formed.

*Fold egg whites into batter, mixing well, but lightly.

*Pour into an ungreased tube pan.

*Bake at 325 degrees for about 1 hour 10 minutes or until done.

*Invert pan & cool completely.

*Frost with your favorite frosting or glaze.

*Try the Orange Cream Cheese Frosting.
