White Chocolate Macadamia Cookies
1/2 cup shortening 1/2 cup butter, softened 3/4 cup brown sugar, firmly packed 1/2 cup sugar 1 large egg 1 1/2 teaspoon pure vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 6-ounce package white chocolate baking bars, cut into small chunks 1 7-ounce jar macadamia nuts, roughly chopped Beat shortening & butter with mixer until creamy; gradually add sugars, beating well. Add egg & vanilla, beat well. Stir in white chocolate & nuts. Drop dough by rounded teaspoons 2 inches apart onto lightly greased cookie sheets. Bake at 350 degrees for 8 to 10 minutes or until lightly browned. Cool slightly on cookie sheets, remove to wire racks to cool completely. Yields: 4 dozen.
