Big Apple Dumplings
This was one of my Mothers favorite recipes. It is over 60 years old, and still one of my most requested recipes. It takes a little more time to prepare but well worth it. Pastry: 2 cups all-purpose flour 1 teaspoon salt 2/3 cup shortening 1/3 cup milk Sift flour & salt, cut in shortening. Add milk a tablespoon at a time. Mix & press together. Roll 1/4-inch thick. Cut in squares. Sauce: 1 1/4 cups sugar 2 cups water 1/2 teaspoon cinnamon 1/2 cup butter Combine sugar, water & cinnamon. Cook 5 minutes & add butter. 6 apples Raisins Chopped nuts, toasted Honey Pare & core apples. Fill cavity with raisins & nuts, drizzle with a little honey, put a pat of butter on top & sprinkle with cinnamon. Place apple in center of square. Fold corners over & pinch edges together. Place in greased 9x13-inch pan. Pour sauce over dumplings. Bake at 375 degrees for 35 minutes or until golden brown. I baste dumplings several times with sauce during baking NOTE: I double sauce & pastry. I always make extra & I like more sauce.
